Recipe: Easy Chocolate Cupcakes

Miss B loves to bake, so today she is sharing an easy chocolate cupcake & icing recipe with you. She added a little treat inside the cupcakes too. Enjoy! This was one of her activities from her School Holiday Ideas Jar. 



Easy Chocolate Cupcake Recipe

Ingredients: (Makes six cupcakes)
You will need:
1/2 cup butter
1/2 cup sugar (castor)
2 eggs
1 cup of Self-Raising Flour
2 teaspoons of cocoa powder
1 teaspoon of baking soda

Mix together butter and sugar. Add eggs.
Add flour, cocoa powder & baking soda  
Stir it all together
Spoon the mixture into muffin cups
Bake for 15-20 minutes or until knife/chopstick inserted into the cupcake comes out clean.

Leave to cool and then decorate!

Easy Icing Recipe

Ingredients: 
You will need: 
1 1/2 cup of icing sugar
1 tablespoon of butter
1-3 teaspoons of water/milk (note: milk will make it smooth)
1 drop of colouring

Method: 
Combine icing sugar & butter in a bowl. Once done, add milk a bit at a time until you get the consistency you want. Add colour & spread over your cupcake or cake. 


Once cooled, scoop out the middle of the cupcake (keeping the top) 

Add your favourite chocolate treats (M&Ms, Jaffas etc)

Put the top back on to hide your treats.
Ready for the icing!



Add your choice of sprinkles

Recipe: Banana Choc Chip Muffins


Miss B loves to bake, especially these Banana Choc Chip Muffins. They are easy to make and oh-so delicious! 


Ingredients

2½ cups flour
¾ cup Soft Brown Sugar
4 tsp baking powder
1 cup chocolate chips
2 eggs
2 ripe bananas, peeled and mashed
¼ cup Canola, Vegetable or Soya oil
1 cup milk
Method
Preheat oven to 180°C conventional or 160°C fan-forced.  Grease 12 hole muffin tin (standard size) or line with muffin/cupcake cases.
In a medium bowl beat the eggs, mashed bananas, oil, milk and sugar together.
In a large bowl - mix in the flour, baking powder and chocolate chips.
Add the banana mixture to the large bowl and mix until just combined. 
Spoon into prepared tin and bake for 15 – 20 minutes or until golden brown (they should spring back when gently pressed).
 Cool for two minutes in the tins, then gently twist and place the muffins out to cool on a wire rack. 
 Enjoy!

Recipe: Chunky Choc Cookies

Miss B loves to bake! (I wish I did it more). Last school holidays we made Chunky Chocolate Cookies. We were just going to do chocolate chip cookies...(because that's all we had in the pantry) but I really liked the effect that the M&M's gave...so a trip to the dairy halfway through the process was needed, I am really glad we added the M&M's - the cookies look and taste DELICIOUS!
Quite proud of myself actually (well both of us - it was a TEAM effort)> Keep scrolling for an easy recipe.

Chunky Choc Cookies

Ingredients: 
125g butter, softened
1 teaspoon vanilla extract
1 1/4 cups firmly packed brown sugar
1 egg
1 cup plain flour
1/2 teaspoon baking soda
1/3 cup cocoa powder
1/3 cup (100g) peanut M&Ms
1/3 cup (70g) mini M&Ms
1/2 cup (75g) milk chocolate melts (or choc chips) 



Method: 
1. Preheat oven to moderate 180 degrees C fan- forced. Lightly grease two over trays. 

2. Beat butter, vanilla, sugar & egg in a small bowl until smooth (do not overmix).

3. Transfer mixutre to large bowl - mix in sifted, combined dry ingredients then all chocolates. 

4. Place level teaspoons of the mixture onto trays, allowing 5cm between each cookie. Bake, uncovered for 10 minutes. Leave for 5 minutes then transfer to wire rack to cool.
