Ingredients:
3 large, very ripe bananas, mashed
1 tsp Vanilla extract
1/4 cup Olive oil
2 cups Rolled Oats
1/2-1 cup chocolate chips
1 tsp Cinnamon (optional)
Directions:
Preheat over to 180C.
Combine bananas, vanilla and oil in a large bowl. Add the oats and cinnamon (optional) to the banana mixture along with the chocolate chips and stir until just combined.
Spoon the mixture evenly on a greased baking tray and bake for 12-15 minutes, until cooked and golden brown. Cool for 10 minutes, then cool completely on a wire rack.

For a healthy alternative - you can replace the chocolate chips with raisins or apple, and use apple juice instead of oil.
