Advent Calendar: Day 16, 17 & Day 18: Pic's Peanut Butter Rudolph Cookies

Miss B has been busy with her Advent Calendar and is loving all the Christmas activities! She is also enjoying her 12 books of Christmas. One more week until Christmas! Are you ready?

Day 16: Christmas Word Search 
There are so many Christmas worksheets, including word searches/crosswords/mazes, available online. Find one that is age appropriate for your child and print. I still have my Christmas Activity Resource Box from when I was teaching - so I grabbed a couple of worksheets for Miss B to complete today! A nice activity for her to do while listening to some Christmas songs.

Day 17: Christmas Movie Night
Tonight on Disney Channel - A Christmas Carol featuring Jim Carrey. Perfect!

Day 18: Pic's Peanut Butter Rudolph Cookies
You will need: 
3/4 cup peanut butter (I've used Pic's Peanut Butter)
1 1/4 cup firmly packed brown sugar
1/2 cup shortening
3 tablespoons milk
1 tablespoon vanilla
1 egg
1 3/4 cup all-purpose flour
3/4 teaspoon baking soda
3/4 teaspoon salt
Pretzels 
Choc Drops
1 bag of Jaffas

Preheat oven to 180°C.
Makes up to 40 cookies.

Here's what you do:


In a medium-large bowl, combine peanut butter, brown sugar, shortening, vanilla & milk. Add egg and continue to mix until just blended.  

In a separate bowl, combine flour, baking soda and salt.

Add the above to the peanut butter mixture and mix until blended. 


Roll dough into a small ball (1-inch). To make reindeer-shape cookies, pinch the bottom of the ball to form a point, then gently flatten with your hand. As shown in photos. 



Place onto baking tray/sheet - bake for 7-8 minutes, until set or when they are beginning to brown.


Remove from oven and immediately (and gently) press two pretzels into the tops of the cookies for the reindeer's antlers. Press two choc drops in for the eyes and one red Jaffa for the nose (you can also use red M&Ms). They look Oh-So CUTE!


Allow to cool for 2 minutes on the baking sheet and then transfer to a wire rack to cool completely.
