E is for Easy Chocolate Cupcake Recipe

My daughter, Miss B loves to bake, so today she is sharing an easy chocolate cupcake & icing recipe with you. She added a little treat inside the cupcakes too. This was one of her activities from our School Holiday Ideas Jar. 


Easy Chocolate Cupcake Recipe
Ingredients: (Makes six cupcakes)
You will need:
1/2 cup butter
1/2 cup sugar (castor)
2 eggs
1 cup of Self-Raising Flour
2 teaspoons of cocoa powder
Mix together butter and sugar. Add eggs.
Add flour, & cocoa powder
Stir it all together
Spoon the mixture into muffin cups
Bake for 15-20 minutes or until knife/chopstick inserted into the cupcake comes out clean.
Leave to cool and then decorate!
Easy Icing Recipe
Ingredients: 
You will need: 
1 1/2 cup of icing sugar
1 tablespoon of butter
1-3 teaspoons of water/milk (note: milk will make it smooth)
1 drop of colouring

Method: 
Combine icing sugar & butter in a bowl. Once done, add milk a bit at a time until you get the consistency you want. Add colour & spread over your cupcake.
Once cooled, scoop out the middle of the cupcake (keeping the top) 
Add your favourite chocolate treats (M&Ms, Jaffas etc)
Put the top back on to hide your treats.
Ready for the icing!


Add your choice of sprinkles

Enjoy!!!
